Ingredients:
2 (6-ounce) filet mignon steaks
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon butter
1/2 cup chopped shallots
1/4 cup red wine
1/4 cup beef broth
1/4 cup heavy cream
2 tablespoons chopped fresh parsley
4 slices of foie gras
Salt and pepper to taste
Instructions:
Season the steaks with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Cook the steaks for 2-3 minutes per side, or until desired doneness.
Remove the steaks from the skillet and let them rest for 5 minutes.
In the same skillet, melt the butter.
Add the shallots and cook until softened, about 5 minutes.
Add the red wine and beef broth to the skillet and bring to a simmer.
Cook for 5 minutes, or until the sauce has thickened.
Stir in the heavy cream and parsley.
Season the sauce with salt and pepper to taste.
Top each steak with a slice of foie gras and spoon the onion sauce over top.
