Ingredients
For the Chicken:
2 large chicken thighs or breasts, boneless
1 cup buttermilk
1 tsp garlic powder
1 tsp paprika
1 tsp cayenne pepper (optional, for extra heat)
1/2 tsp salt
1 1/2 cups all-purpose flour
1/2 cup cornstarch
Vegetable oil, for frying
For the Honey Butter Glaze:
1/4 cup unsalted butter, melted
2 tbsp honey
1 tbsp hot sauce
1/2 tsp smoked paprika
For the Sandwich:
2 sesame seed buns, toasted
1/4 cup spicy mayo (mayonnaise mixed with sriracha)
Pickles, optional
Instructions
Marinate the chicken:
In a bowl, combine buttermilk, garlic powder, paprika, cayenne, and salt. Add the chicken, cover, and marinate in the fridge for at least 2 hours (or overnight for best flavor).
Bread the chicken:
In a shallow dish, mix flour and cornstarch. Remove chicken from the marinade, letting excess drip off, and coat in the flour mixture. For extra crispiness, repeat by dipping the chicken back in buttermilk and re-coating with flour.
Fry the chicken:
Heat oil in a deep skillet or pot to 350°F (175°C). Fry the chicken in batches for 6-8 minutes per side, or until golden and cooked through. Drain on paper towels.
Prepare the honey butter glaze:
In a bowl, mix melted butter, honey, hot sauce, and smoked paprika. Brush the glaze generously over the fried chicken.
Assemble the sandwich:
Spread spicy mayo on both sides of the toasted buns. Add the glazed chicken and top with pickles, if desired.
Tips for Extra Flavor
Add a slice of cheddar cheese for a melty addition.
Pair with sweet potato fries or coleslaw for a complete meal.
