Shrimp Fajita Bowl with Cilantro Lime Rice
Ingredients
For the Shrimp and Veggies:
1 lb shrimp, peeled and deveined
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/4 tsp garlic powder
Salt and pepper to taste
For the Bowl:
2 cups cooked white rice
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 cup black beans, warmed
1 cup grilled corn
Lime wedges for serving
Directions
Prepare the shrimp: In a bowl, toss shrimp with olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper.
Sear the shrimp and peppers: Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque, then remove and set aside. In the same skillet, sauté bell peppers until tender and slightly charred.
Make cilantro lime rice: In a bowl, toss the cooked rice with chopped cilantro and lime juice. Season with salt to taste.
Assemble the bowl: Divide the cilantro lime rice into bowls. Top with shrimp, sautéed bell peppers, black beans, and grilled corn.
Garnish and serve: Garnish with additional cilantro and lime wedges. Serve warm and enjoy!
