Savory Mushroom Beef Casserole

Ingredients

1 lb ground beef
2 cups fresh mushrooms, sliced
1 medium onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
2 cups cooked pasta (e.g., egg noodles or penne)
1 cup shredded mozzarella or cheddar cheese
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil
1/4 cup breadcrumbs (optional, for topping)
2 tablespoons butter (melted, optional, for breadcrumbs)
Instructions

Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish.

Cook the Beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Remove and set aside.

Sauté Mushrooms and Vegetables:
In the same skillet, add mushrooms, onions, and garlic. Cook for 5-7 minutes until mushrooms are browned and onions are softened. Season with thyme, paprika, salt, and pepper.

Prepare the Sauce:
Stir in the cream of mushroom soup, sour cream, and milk. Mix until smooth. Add the cooked ground beef back into the skillet and combine.

Combine with Pasta:
Add the cooked pasta to the skillet and mix everything together. Adjust seasoning as needed.

Assemble the Casserole:
Pour the mixture into the prepared casserole dish. Sprinkle shredded cheese evenly over the top.

Optional Topping:
If desired, mix breadcrumbs with melted butter and sprinkle over the cheese for a crispy topping.

Bake:
Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly. If using breadcrumbs, bake until they’re golden brown.

Serve:
Let cool for a few minutes before serving. Garnish with fresh parsley if desired.
