Pineapple Chicken and Rice
A refreshing, herby version perfect for a light and flavorful meal.
Ingredients:
1 lb chicken breast, cubed
1 cup pineapple chunks
2 cups cooked wild rice
1 tbsp olive oil
1/4 cup chopped parsley
1 tsp lemon zest
Preparation:
Sauté chicken in olive oil until golden.
Add pineapple and cook until caramelized.
Mix with wild rice and stir in parsley and lemon zest.
Serve with additional parsley for garnish.
Tip: Add a handful of chopped mint for a unique flavor twist.
