One-Pan Roasted Chicken and Veggies

Ingredients

2 chicken breasts, diced
2 medium potatoes, diced
1 cup green beans, trimmed
1 zucchini, sliced into half-moons
2 carrots, chopped
3 garlic cloves, minced
3 tbsp olive oil
1 tsp dried rosemary
1 tsp dried thyme
1/2 tsp smoked paprika
Salt and pepper to taste
Directions

Preheat oven: Preheat your oven to 400°F (200°C).
Prepare the ingredients: In a large bowl, combine diced chicken, potatoes, green beans, zucchini, carrots, and minced garlic.
Season and toss: Drizzle olive oil over the mixture. Sprinkle with rosemary, thyme, smoked paprika, salt, and pepper. Toss everything until evenly coated.
Spread and bake: Spread the mixture evenly on a large baking sheet. Bake for 25-30 minutes, stirring halfway, until the chicken is fully cooked and the vegetables are tender.
