Mediterranean Rice Bowl

Ingredients

1 cup cooked white or brown rice
1/2 cup cherry tomatoes, diced
1/4 cup pitted Kalamata olives
1/4 cup crumbled feta cheese
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp smoked paprika
1 tbsp fresh parsley, chopped
Directions

Season the Rice:
In a large bowl, mix the cooked rice with olive oil, lemon juice, and smoked paprika. Toss to combine.

Add the Toppings:
Fold in the diced tomatoes, olives, and half of the feta cheese.

Garnish and Serve:
Top with the remaining feta and fresh parsley. Serve warm or at room temperature for a fresh and zesty Mediterranean-inspired dish!
