Mediterranean Chicken Salad
Ingredients
2 cups cooked chicken breast, diced or shredded
4 cups fresh spinach leaves
1/2 cup marinated artichoke hearts, quartered
1/3 cup sun-dried tomatoes, chopped
1/3 cup salami slices, chopped or halved
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Italian seasoning
Salt and pepper to taste
Directions
Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Set aside.
Assemble the salad: In a large bowl, layer spinach leaves as the base. Top with diced chicken, marinated artichoke hearts, sun-dried tomatoes, and chopped salami.
