Loaded Potato Skins
Ingredients
4 medium russet potatoes
1 cup shredded cheddar cheese
4 slices of crispy bacon, crumbled
2 green onions, chopped
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
Directions
Bake the Potatoes:
Preheat oven to 400°F (200°C). Scrub potatoes clean, pierce with a fork, and bake for 45-50 minutes until tender. Let cool slightly.
Scoop & Season:
Cut each potato in half lengthwise. Scoop out most of the inside, leaving a thin layer of potato. Brush potato skins with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
Bake to Crisp:
Place the skins cut-side up on a baking sheet. Bake for 10-15 minutes until crispy.
Add Toppings:
Sprinkle shredded cheese and crumbled bacon into the potato skins. Return to the oven for 5 minutes or until the cheese melts.
Garnish & Serve:
Top with chopped green onions and serve with sour cream or your favorite dipping sauce.
