Grilled Halloumi Veggie Skewers
Ingredients
8 oz (225g) halloumi cheese, cubed
1 zucchini, sliced
1 pint cherry tomatoes
Fresh basil leaves
2 tbsp olive oil
1 tbsp balsamic glaze
Salt and black pepper to taste
Wooden or metal skewers
Directions
Prepare the skewers:
Alternate halloumi cubes, zucchini slices, cherry tomatoes, and basil leaves onto skewers.
Season:
Brush the skewers with olive oil and sprinkle with salt and black pepper.
Grill:
Preheat a grill or grill pan over medium heat. Cook the skewers for 2-3 minutes per side, or until halloumi is golden and veggies are tender.
Finish:
Drizzle with balsamic glaze before serving for an extra burst of flavor!
