Ingredients

For the Stir Fry:

1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
2 cups broccoli florets
1 cup mushrooms, sliced
1 yellow bell pepper, diced
2 tablespoons vegetable oil (or sesame oil for extra flavor)
For the Sauce:

4 cloves garlic, minced
1/4 cup soy sauce (low sodium, if preferred)
2 tablespoons oyster sauce (optional for richer flavor)
1 tablespoon honey or brown sugar
1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
1/2 teaspoon freshly grated ginger (optional)
Instructions

Prepare Ingredients:
Wash and cut the vegetables into bite-sized pieces. Cube the chicken and pat it dry with paper towels.

Make the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, honey, garlic, ginger (if using), and the cornstarch mixture. Set aside.

Cook the Chicken:
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry until golden and cooked through, about 5-6 minutes. Remove from the pan and set aside.

Stir Fry Vegetables:
In the same pan, heat the remaining oil. Add broccoli, mushrooms, and bell pepper. Stir-fry for 3-4 minutes, until tender but still crisp.

Combine and Cook:
Return the chicken to the pan. Pour the sauce over the chicken and vegetables. Toss to coat everything evenly. Allow the sauce to simmer for 2-3 minutes, until thickened.

Serve:
Remove from heat and serve over steamed rice, noodles, or cauliflower rice. Garnish with sesame seeds or green onions if desired.

Storage Tips:
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat gently in a skillet or microwave.
