Easy Cheesy Potato Casserole
Ingredients
6 cups diced potatoes (boiled until tender or use frozen hash browns)
2 cups shredded cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/4 cup melted butter
1/2 tsp garlic powder
Salt and pepper to taste
2 cups cornflakes, crushed (for topping)
2 tbsp melted butter (for topping)
Directions
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
In a large bowl, mix the potatoes, shredded cheddar cheese, sour cream, cream of chicken soup, melted butter, garlic powder, salt, and pepper until well combined.
Spread the potato mixture evenly into the prepared casserole dish.
Combine crushed cornflakes with 2 tbsp melted butter in a small bowl. Sprinkle evenly over the potato mixture.
Bake for 30-35 minutes, or until the topping is golden brown and the casserole is bubbly.
Serve hot and enjoy as a side dish or main course!
