Crunchy Asian Slaw with Sesame Ginger Dressing

Ingredients

2 cups shredded green cabbage
2 cups shredded purple cabbage
1 cup shredded carrots
1 red bell pepper, thinly sliced
1/2 cup chopped green onions
1/4 cup fresh cilantro, chopped
1/4 cup roasted peanuts or cashews (optional)
2 tbsp sesame seeds
For the Dressing:

3 tbsp sesame oil
2 tbsp rice vinegar
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp honey (or maple syrup for vegan)
1 clove garlic, minced
1 tsp grated ginger
Juice of 1 lime
Directions

In a large mixing bowl, combine the green cabbage, purple cabbage, carrots, red bell pepper, green onions, and cilantro. Toss well.

In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, garlic, ginger, and lime juice until smooth.

Pour the dressing over the vegetables and toss until everything is evenly coated.

Top with sesame seeds and roasted peanuts or cashews (if using).

Serve immediately or refrigerate for up to 2 hours to let the flavors meld together. Enjoy!
