Ingredients:
6 potatoes, halved
3 tbsp olive oil
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
Fresh parsley, chopped
Instructions:
Preheat oven to 400°F (200°C).
Score the potato halves, brush with oil, and sprinkle garlic, salt, and pepper evenly.
Roast cut-side down for 40 minutes until crispy and golden.
