Creamy Turmeric Rice

Ingredients

1 cup basmati or jasmine rice, rinsed
2 cups vegetable broth or water
1/2 cup coconut milk
1 tsp ground turmeric
1/2 tsp garlic powder
1/4 tsp ground ginger
1 tbsp olive oil or butter
Salt to taste
For Garnish:

Fresh arugula
Sesame seeds (black and white)
Directions

Cook the Rice: In a medium saucepan, heat olive oil or butter over medium heat. Add rinsed rice and stir to coat.

Add Spices: Stir in turmeric, garlic powder, ginger, and salt until fragrant, about 1 minute.

Simmer: Add vegetable broth and coconut milk. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.

Fluff and Garnish: Fluff the rice with a fork. Top with fresh arugula and sprinkle with sesame seeds for a pop of flavor and texture.

Serve: Enjoy as a side dish or a light meal!
