Creamy Mushroom and Spinach Fettuccine

Ingredients:
12 oz fettuccine pasta

2 tbsp olive oil
3 garlic cloves, minced

1 cup sliced mushrooms

2 cups fresh spinach

1 1/2 cups heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning
Salt and pepper to taste

Instructions:
Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Sauté the mushrooms:
Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant. Add the mushrooms and cook until they are golden brown and tender, about 5 minutes.

Add the spinach:
Stir the fresh spinach into the skillet and cook until wilted, about 2 minutes.

Make the creamy sauce:
Pour in the heavy cream and stir in the Parmesan cheese. Add Italian seasoning, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens slightly.

Combine pasta and sauce:
Add the cooked fettuccine to the skillet and toss to coat in the creamy sauce. If the sauce is too thick, stir in a bit of the reserved pasta water.

Serve and enjoy:
Plate the pasta and garnish with extra Parmesan cheese and freshly ground black pepper. Serve hot!
