Creamy Garlic Shrimp Pasta
Ingredients
8 oz (225g) fettuccine or linguine pasta
1 lb (450g) large shrimp, peeled and deveined
2 tbsp olive oil
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp red chili flakes (optional)
1/2 tsp Italian seasoning
Salt and pepper, to taste
2 tbsp fresh parsley or chives, chopped
Directions
Cook the Pasta: Boil fettuccine in salted water until al dente. Drain and set aside.
Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink. Remove and set aside.
Sauté Garlic & Tomatoes: In the same skillet, add minced garlic and sun-dried tomatoes. Cook for 1-2 minutes until fragrant.
Prepare the Sauce: Lower the heat and pour in heavy cream. Stir in Parmesan cheese, chili flakes, and Italian seasoning. Simmer for 5 minutes until the sauce thickens.
Combine: Add cooked pasta and shrimp back to the skillet. Toss until everything is coated in the creamy sauce.
Garnish & Serve: Sprinkle with fresh parsley or chives and serve immediately.
