Ingredients

2 tbsp butter
1 small onion, chopped
2 celery stalks, diced
2 large carrots, sliced
3 cloves garlic, minced
6 cups chicken broth
2 cups shredded cooked chicken
2 cups egg noodles
1 cup frozen peas
1/2 cup heavy cream
1/2 tsp dried thyme
1/2 tsp dried parsley
Salt and pepper to taste
Fresh parsley for garnish
Directions

Sauté the veggies: In a large pot, melt the butter over medium heat. Add onions, carrots, and celery, and cook until softened (about 5–6 minutes). Add garlic and cook for 1 more minute.

Add broth and seasonings: Pour in the chicken broth, thyme, and parsley. Bring to a boil.

Cook the noodles: Add the egg noodles to the pot and simmer for 8–10 minutes, or until tender.

Stir in chicken and cream: Add the shredded chicken, frozen peas, and heavy cream. Stir and let the soup simmer for another 5 minutes until heated through. Season with salt and pepper.

Garnish and serve: Sprinkle with fresh parsley and serve hot!
