Creamy Baked Chicken with Mushrooms and Cheese
Ingredients:
4 chicken breasts
2 cups mushrooms, sliced
2 tbsp olive oil
2 tbsp butter
3 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tsp dried thyme
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Chicken:
Season the chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat. Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
Cook the Mushrooms:
In the same skillet, add butter and sauté the mushrooms until golden and tender. Stir in minced garlic and cook for another minute.
Make the Creamy Sauce:
Add chicken broth, heavy cream, and thyme to the skillet. Bring to a gentle simmer. Stir in Parmesan cheese until melted and well combined. Adjust seasoning with salt and pepper.
Assemble the Dish:
Place the seared chicken breasts in a baking dish. Pour the creamy mushroom sauce over the chicken. Top with shredded mozzarella cheese.
Bake:
Bake in the preheated oven for 25–30 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.
Garnish and Serve:
Remove from the oven and garnish with fresh parsley. Serve hot with your favorite side dishes like mashed potatoes or steamed vegetables.
