Cozy Chicken and Rice Soup
Ingredients
2 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
3 medium carrots, sliced
2 celery stalks, chopped
1 cup uncooked rice (white or brown)
8 cups chicken broth
2 cups cooked, shredded chicken
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions
Sauté Veggies: Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook for 5 minutes, stirring occasionally.
Add Rice & Broth: Stir in rice, chicken broth, thyme, and parsley. Bring to a boil.
Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes (longer for brown rice), stirring occasionally, until rice is tender.
Add Chicken: Stir in shredded chicken. Simmer for another 5 minutes to heat through.
Season: Taste and adjust with salt and pepper as needed.
Serve: Ladle into bowls, garnish with fresh parsley if desired, and enjoy warm!
