Chicken Parmesan

Ingredients:
Chicken:

2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tsp Italian seasoning
2 tbsp olive oil
Tomato Sauce:

1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 can (14 oz) crushed tomatoes
1 tsp dried basil
1/2 tsp dried oregano
Salt and pepper to taste
1/2 tsp sugar (optional, to balance acidity)
Topping:

1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh parsley or basil for garnish
Instructions:
1. Prepare the Chicken:
Preheat oven to 400°F (200°C).
Season chicken breasts with salt, pepper, and Italian seasoning.
Heat 2 tbsp olive oil in an oven-safe skillet over medium heat.
Sear chicken breasts for 3–4 minutes per side until golden brown. Remove and set aside.
2. Make the Tomato Sauce:
In the same skillet, add 1 tbsp olive oil and sauté the onion until soft (about 3 minutes).
Add minced garlic and cook for another 30 seconds.
Stir in crushed tomatoes, basil, oregano, salt, pepper, and sugar (if using). Let simmer for 10 minutes.
3. Assemble the Dish:
Nestle the seared chicken breasts into the tomato sauce.
Spoon some sauce over the chicken to coat it.
4. Add Cheese:
Sprinkle the chicken with mozzarella and Parmesan cheese.
5. Bake:
Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
6. Garnish and Serve:
Remove from oven and garnish with fresh parsley or basil.
Serve hot with pasta, rice, or a side salad.
