Chicken Meatballs in Creamy Spinach Sauce

Ingredients:
For the Meatballs:
1 lb ground chicken
1 egg
½ cup breadcrumbs
¼ cup grated Parmesan cheese
2 garlic cloves, minced
2 tablespoons chopped parsley
Salt and pepper, to taste
1 tablespoon olive oil
For the Sauce:
2 tablespoons butter
2 garlic cloves, minced
1 cup heavy cream
½ cup grated Parmesan cheese
2 cups fresh spinach, chopped
Salt and pepper, to taste
For the Pasta:
8 oz spaghetti
Salt, to taste
Instructions:
Prepare the Meatballs:
In a bowl, mix ground chicken, egg, breadcrumbs, Parmesan, minced garlic, parsley, salt, and pepper. Form into meatballs.
Heat olive oil in a skillet over medium heat. Cook the meatballs until golden brown and cooked through. Remove and set aside.
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain and set aside.
Make the Sauce:
In the same skillet, melt butter over medium heat. Sauté garlic until fragrant.
Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until the sauce thickens.
Add chopped spinach and cook until wilted. Season with salt and pepper.
Combine and Serve:
Return the meatballs to the skillet, coating them in the sauce.
Serve the meatballs and creamy spinach sauce over a bed of spaghetti. Garnish with fresh parsley.
