Chicken Cacciatore in a Slow Cooker
Ingredients
4 bone-in chicken thighs (or 2 lbs chicken breast)
1 large onion, sliced
3 cloves garlic, minced
1 bell pepper, sliced (any color)
8 oz mushrooms, sliced
1 can (14.5 oz) diced tomatoes
1 can (6 oz) tomato paste
1/2 cup chicken broth
1/2 cup dry red wine (optional)
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes (optional)
1/2 tsp salt
1/4 tsp black pepper
Fresh basil or parsley, for garnish
Cooked pasta, rice, or crusty bread (for serving)
Directions
Place the chicken in the slow cooker. Season with salt, pepper, oregano, and basil.
Add onion, garlic, bell pepper, and mushrooms over the chicken.
In a bowl, mix diced tomatoes, tomato paste, chicken broth, red wine (if using), and red pepper flakes. Pour over the chicken and vegetables.
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the chicken is tender and cooked through.
Shred the chicken or leave it whole, depending on preference. Serve the cacciatore over pasta, rice, or alongside crusty bread. Garnish with fresh basil or parsley.
