Cheesy Spinach Puffs

Ingredients:
For the Dough

2 cups all-purpose flour

1 tsp salt

1/2 cup warm water

1/4 cup olive oil

For the Filling

2 cups fresh spinach, chopped

1 cup mozzarella cheese, shredded

1/2 cup ricotta cheese

1 garlic clove, minced

Salt and pepper to taste

For the Topping

1 egg, beaten

1 tbsp poppy seeds

Instructions:
Prepare the Dough

In a mixing bowl, combine flour and salt. Gradually add warm water and olive oil, mixing until a soft dough forms. Knead for 5 minutes, cover, and let rest for 20 minutes.
Make the Filling

Sauté the spinach in a pan until wilted. Let cool, then mix with mozzarella, ricotta, garlic, salt, and pepper.
Shape the Puffs

Roll the dough into small circles. Place a spoonful of filling in the center of each circle and pinch the edges to form a well around the filling.
Bake the Puffs

Preheat the oven to 375°F (190°C). Brush the puffs with beaten egg and sprinkle with poppy seeds. Bake for 20-25 minutes or until golden brown.
