Cheesy Ravioli Skillet with Chicken and Veggies
Ingredients
3 chicken breasts, seasoned with salt and pepper
1 tbsp olive oil
1 medium zucchini, sliced
1 cup sweet corn (fresh or frozen)
2 cups refrigerated cheese ravioli
1 1/2 cups marinara sauce
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tbsp Italian seasoning
2 tbsp fresh parsley, chopped (for garnish)
Directions
Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear until golden brown on both sides (about 3-4 minutes per side). Remove and set aside.
Cook the Veggies:
In the same skillet, add zucchini and corn. Sauté for 2-3 minutes until slightly softened.
Add Sauce & Ravioli:
Pour in marinara sauce and chicken broth, then add the ravioli. Stir to combine, making sure the ravioli is submerged in the sauce.
Simmer with Chicken:
Place the chicken back into the skillet. Sprinkle with Italian seasoning. Cover and simmer on medium-low heat for 8-10 minutes, or until the chicken is cooked through and the ravioli is tender.
Finish with Cheese:
Sprinkle Parmesan cheese over the dish. Let it melt for 1-2 minutes.
Serve:
Garnish with fresh parsley and serve warm straight from the skillet!
