Cheesy Chicken Tacos
Ingredients:
For the chicken:
2 lbs boneless, skinless chicken thighs or breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
For the tacos:
8 small corn or flour tortillas
1 cup shredded mozzarella cheese
1/2 onion, finely sliced
Fresh cilantro, chopped for garnish
Lime wedges
Instructions:
Cook the chicken:
In a bowl, season the chicken thighs or breasts with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper.
Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes per side, until fully cooked and golden brown on the outside.
Remove the chicken from the pan and let it rest for 5 minutes. Then slice or shred the chicken into bite-sized pieces.
Prepare the tortillas:
Heat the tortillas in a dry skillet or on a griddle for about 30 seconds on each side, until warmed through and slightly charred.
Assemble the tacos:
On each tortilla, layer the cooked chicken, a sprinkle of shredded mozzarella cheese, and sliced onions.
Optionally, return the tacos to the skillet for a minute to melt the cheese and warm everything through.
Serve:
Garnish with freshly chopped cilantro and serve with lime wedges on the side.
