These golden, melty beef burritos are loaded with seasoned ground beef, gooey cheese, and fresh greens—a perfect go-to meal that’s packed with flavor!

Ingredients:
For the Filling:
1 lb ground beef
1/2 onion, diced
1 red bell pepper, diced
1 tsp minced garlic
2 tbsp taco seasoning
1/4 cup water
1 cup shredded cheddar cheese

1/2 cup spinach or kale (optional)

For the Wraps:
4 large flour tortillas

1 tbsp butter or oil (for crisping)
Instructions:
Step 1: Cook the Filling
Heat a skillet over medium heat and cook the ground beef until browned. Drain any excess fat.
Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are soft.
Stir in taco seasoning and water. Cook for 2-3 minutes until the beef mixture is well coated.
Toss in the spinach or kale (if using) and stir until wilted. Remove from heat and mix in shredded cheese.
Step 2: Assemble the Burritos
Lay a flour tortilla flat and place 1/4 of the beef mixture in the center.
Fold in the sides and roll it tightly into a burrito. Repeat for the remaining tortillas.
Step 3: Toast the Burritos
Heat butter or oil in a skillet over medium heat.
Place the burritos seam-side down and toast for 1-2 minutes until golden and crispy. Flip and repeat on the other side.
Serving Suggestions:
Serve with fresh salsa, guacamole, or sour cream on the side.
Pair with a green salad or rice for a hearty meal.
