Cashew Chicken Stir Fry Recipe

Ingredients
1 lb chicken breast (cubed)
1 tbsp olive oil
1 zucchini, sliced
1 cup mushrooms, sliced
3/4 cup raw cashews
3 cloves garlic, minced
1/4 cup soy sauce
2 tbsp hoisin sauce
1 tbsp honey
1 tbsp cornstarch (mixed with 2 tbsp water)
1 tsp sesame oil
Green onions for garnish (optional)
Instructions
Cook the Chicken:

Heat olive oil in a skillet over medium-high heat.
Add cubed chicken and cook until golden and cooked through (about 5-7 minutes).
Remove the chicken and set aside.
Stir Fry Veggies:

In the same skillet, add a bit more oil if needed.
Stir-fry the zucchini, mushrooms, and garlic for 3-4 minutes until tender.
Make the Sauce:

In a bowl, whisk together soy sauce, hoisin sauce, honey, and sesame oil.
Combine Everything:

Return the chicken to the skillet.
Pour the sauce over the chicken and veggies.
Stir in the cornstarch slurry and cook for 2-3 minutes until the sauce thickens.
Add Cashews:

Stir in the cashews and cook for another 1-2 minutes.
Serve:

Garnish with chopped green onions.
Serve hot over steamed rice or noodles.
