Caramelized Sweet Potatoes with Sesame Glaze
Ingredients
2 medium sweet potatoes (peeled and sliced into 1/2-inch rounds)
2 tbsp vegetable oil
3 tbsp soy sauce
2 tbsp honey or maple syrup
1 tbsp rice vinegar
1 clove garlic (minced)
1 tsp grated ginger
1 tsp sesame oil
1 tbsp sesame seeds (toasted)
1 green onion (sliced, for garnish)
Directions
Step 1: Heat vegetable oil in a skillet over medium heat. Add the sweet potato slices and cook for 3-4 minutes per side until tender and golden brown. Remove and set aside.
Step 2: In the same skillet, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and sesame oil. Bring to a gentle simmer.
Step 3: Add the sweet potatoes back to the skillet and toss to coat them evenly in the glaze. Cook for 2-3 more minutes until the glaze thickens.
Step 4: Sprinkle with toasted sesame seeds and sliced green onions. Serve hot as a side dish or snack!
