Beef and Cheese Tortellini
Ingredients:
12 oz cheese tortellini (fresh or frozen)
1 lb ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 can (14.5 oz) crushed tomatoes
1/2 cup beef broth
1/2 tsp dried oregano
1/2 tsp dried basil
Salt and pepper to taste
1 cup shredded mozzarella cheese
Fresh parsley for garnish
Instructions:
Cook the tortellini according to package instructions, then drain and set aside.
In a large skillet, brown the ground beef over medium heat. Once fully cooked, drain any excess fat.
Add the chopped onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.
Stir in the crushed tomatoes, beef broth, oregano, basil, salt, and pepper. Let the sauce simmer for 5-7 minutes to blend the flavors.
Add the cooked tortellini to the skillet, stirring to coat the pasta in the sauce. Top with shredded mozzarella cheese and cover, allowing it to melt, about 2-3 minutes.
Serve the dish garnished with fresh parsley.
