Crispy Spicy Chicken Sandwich

Ingredients

For the Chicken:

2 boneless, skinless chicken breasts (halved lengthwise)
1 cup buttermilk
1 tsp hot sauce
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
Salt and black pepper to taste
Oil for frying
For the Spicy Sauce:

1/3 cup hot sauce
2 tbsp honey
1 tbsp butter
1/2 tsp garlic powder
For Assembly:

4 brioche buns, toasted
Pickle slices
Optional: mayonnaise or coleslaw
Directions

Marinate the chicken:
In a bowl, combine buttermilk and hot sauce. Add chicken and marinate for at least 30 minutes or up to 4 hours in the fridge.

Prepare the breading:
In a shallow dish, mix flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and black pepper.

Bread the chicken:
Remove chicken from the buttermilk, letting excess drip off. Coat each piece in the flour mixture, pressing firmly to adhere. Set aside.

Fry the chicken:
Heat oil in a deep skillet or fryer to 350°F (175°C). Fry chicken in batches for 5-6 minutes per side, until golden and crispy. Drain on a wire rack or paper towels.

Make the spicy sauce:
In a small saucepan, combine hot sauce, honey, butter, and garlic powder. Cook over low heat until the butter is melted and the sauce is smooth. Toss fried chicken in the spicy sauce until evenly coated.

Assemble the sandwiches:
Spread mayonnaise (optional) on the bottom bun. Add the spicy fried chicken, pickle slices, and the top bun.

Serve and enjoy:
Serve warm with fries or your favorite side dish!
