Cheesy Baked Creamed Corn Casserole
Ingredients
3 cups corn kernels (fresh, canned, or frozen)
1 cup heavy cream
2 tbsp unsalted butter
2 tbsp all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 cup cream cheese, softened
1/4 tsp garlic powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions
Preheat oven: Heat the oven to 375°F (190°C). Lightly grease a baking dish.
Make the cream sauce: Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute. Slowly whisk in heavy cream, then add cream cheese. Stir until smooth.
Combine ingredients: Add corn, garlic powder, salt, and pepper. Stir in Parmesan cheese. Mix well.
Assemble and bake: Pour the corn mixture into the baking dish. Top with mozzarella cheese and bake for 25-30 minutes, or until bubbly and golden brown.
Garnish: Sprinkle with fresh parsley and serve hot.
