Chicken Bacon Spinach Pasta

Ingredients

12 oz penne pasta
2 tbsp olive oil
2 chicken breasts, cut into bite-sized pieces
4 slices bacon, cooked and crumbled
3 garlic cloves, minced
2 cups fresh spinach
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese (plus more for topping)
1/2 cup heavy cream
1/4 cup chicken broth
1 tsp Italian seasoning
Salt and pepper to taste
Directions

Cook Pasta: Boil penne in salted water according to package instructions. Drain and set aside.
Cook Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and fully cooked. Remove and set aside.
Sauté Garlic: In the same skillet, add garlic and cook for 1 minute until fragrant.
Add Veggies: Stir in spinach and cherry tomatoes. Cook until spinach wilts and tomatoes soften, about 3 minutes.
Make Sauce: Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted.
Combine: Add cooked pasta, chicken, and crumbled bacon to the skillet. Toss everything together to coat in the creamy sauce.
Serve: Garnish with extra Parmesan and serve hot!
