Almond Shortbread Cookies
Ingredients
1 cup unsalted butter (softened)
1/2 cup powdered sugar (plus extra for dusting)
1 tsp vanilla extract
2 cups almond flour
1/2 cup all-purpose flour
1/4 tsp salt
Directions
Prepare the dough: In a large mixing bowl, cream together softened butter and powdered sugar until light and fluffy. Mix in vanilla extract.
Combine dry ingredients: Add almond flour, all-purpose flour, and salt to the bowl. Mix until a dough forms.
Chill the dough: Shape the dough into a log or disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Preheat the oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
Shape and bake: Roll out the dough to 1/4-inch thickness or slice the chilled dough into rounds. Place cookies on the baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
Cool and dust: Let the cookies cool completely on a wire rack. Dust with powdered sugar before serving.
