Creamy Garlic Butter Chicken with Rice
Ingredients
For the Chicken:
1 lb chicken breast, cut into bite-sized pieces
1 tbsp olive oil
1 tbsp butter
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
For the Sauce:
3 tbsp butter
3 garlic cloves, minced
1/4 cup chicken broth
1 cup heavy cream (or half-and-half)
1/4 cup grated Parmesan cheese
1/2 tsp paprika
Salt and black pepper to taste
For Serving:
2 cups cooked white rice
Fresh parsley, chopped (for garnish)
Directions
Season and cook the chicken:
In a bowl, season the chicken with paprika, garlic powder, onion powder, salt, and pepper. Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes, until golden and fully cooked. Remove from the skillet and set aside.
Make the sauce:
In the same skillet, melt 3 tablespoons of butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in chicken broth and simmer for 2 minutes. Add heavy cream, Parmesan cheese, paprika, salt, and pepper. Cook for 3-4 minutes, stirring constantly, until the sauce thickens slightly.
Combine the chicken and sauce:
Return the cooked chicken to the skillet and toss to coat in the creamy sauce. Simmer for another 2-3 minutes.
Serve:
Spoon the chicken and sauce over cooked white rice. Garnish with freshly chopped parsley and serve warm.
