Veggie Cream Cheese Tortilla Roll-Ups
Ingredients
4 large flour tortillas
8 oz cream cheese, softened
½ cup sour cream
1 cup shredded cheddar cheese
1 cup diced tomatoes (seeded to avoid extra moisture)
1 cup diced cucumbers
½ cup diced green onions
¼ cup chopped fresh parsley or cilantro
1 tsp garlic powder
Salt & pepper, to taste
Directions
Make the Filling
In a medium bowl, mix cream cheese, sour cream, cheddar cheese, garlic powder, salt, and pepper until smooth. Fold in diced tomatoes, cucumbers, green onions, and parsley/cilantro.
Assemble the Roll-Ups
Spread an even layer of the filling over each tortilla, leaving about ½ inch of space around the edges.
Roll & Chill
Tightly roll up each tortilla. Wrap them in plastic wrap and refrigerate for at least 30 minutes to set.
Slice & Serve
Slice each roll into 1-inch pieces. Arrange on a platter and serve as an appetizer or snack.
