Mediterranean Meatball Bowls

Ingredients

For the Meatballs:

1 lb ground chicken or turkey
1/3 cup breadcrumbs
1 egg, beaten
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper, to taste
2 tbsp olive oil (for cooking)
For the Bowl:

1 cup cooked basmati or brown rice
1/2 cup cucumber slices
1/4 cup cherry tomatoes or olives
1/4 cup crumbled feta cheese
1/4 cup tzatziki sauce (store-bought or homemade)
Directions

Prepare the Meatballs: Combine ground chicken, breadcrumbs, egg, parsley, dill, garlic, cumin, paprika, salt, and pepper in a bowl. Shape into 1-inch meatballs.

Cook: Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown and cooked through, about 8-10 minutes.

Assemble the Bowls: Layer rice in the bottom of a bowl. Add the meatballs, cucumber slices, cherry tomatoes or olives, and a dollop of tzatziki sauce. Sprinkle with feta cheese and garnish with parsley or dill.

Serve: Drizzle with a touch of olive oil or lemon juice for extra Mediterranean flair!
