Italian Chopped Salad
Ingredients
4 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup canned chickpeas, rinsed and drained
1/2 cup marinated artichoke hearts, chopped
1/4 cup fresh parsley, chopped
1/4 cup sliced salami or pepperoni (optional)
1/4 cup shredded or cubed provolone cheese
For the Dressing:
3 tbsp olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
1/2 tsp Italian seasoning
Salt and pepper to taste
Directions
In a large salad bowl, layer romaine lettuce, cherry tomatoes, cucumber, red onion, chickpeas, artichoke hearts, parsley, salami, and provolone cheese.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, Italian seasoning, salt, and pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat.
Serve immediately and enjoy this fresh and flavorful meal!
