Ingredients

4 boneless, skinless chicken breasts
8 slices of bacon
1/2 cup cream cheese, softened
1/2 cup spinach, finely chopped
1/4 cup shredded mozzarella cheese
1/4 cup crumbled blue cheese (optional)
1/2 tsp garlic powder
Salt and pepper to taste
Fresh parsley (for garnish)
Directions

Prepare the filling: In a bowl, mix cream cheese, spinach, mozzarella cheese, blue cheese (if using), garlic powder, salt, and pepper until well combined.
Stuff the chicken: Carefully slice each chicken breast horizontally to create a pocket. Stuff each pocket with the cheese mixture and secure with toothpicks if needed.
Wrap with bacon: Wrap 2 slices of bacon around each stuffed chicken breast, ensuring it covers the filling and overlaps slightly.
Sear the chicken: Heat a skillet over medium-high heat and sear the bacon-wrapped chicken for 2-3 minutes per side until the bacon is golden.
Bake: Transfer the chicken to a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
Serve: Remove toothpicks, garnish with parsley, and serve hot with a side salad or roasted vegetables.
