Creamy Garlic Mushroom Pork Chops
Ingredients
4 bone-in pork chops (about 1 inch thick)
2 tbsp olive oil
2 tbsp unsalted butter
2 cups mushrooms (sliced)
3 garlic cloves (minced)
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tsp Dijon mustard
1 tsp fresh thyme leaves (plus extra for garnish)
Salt and pepper (to taste)
Directions
Season and sear the pork chops: Season pork chops on both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Remove from skillet and set aside.
Sauté the mushrooms: In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook for 5 minutes until softened. Stir in minced garlic and cook for 1 more minute.
Make the creamy sauce: Reduce the heat to low. Add heavy cream, chicken broth, Parmesan cheese, Dijon mustard, and thyme. Stir and let the sauce simmer for 3-4 minutes until slightly thickened.
Combine and cook: Return the pork chops to the skillet, spooning the sauce over the top. Cover and simmer for 5-7 minutes, or until the pork chops are fully cooked (internal temp of 145°F/63°C).
Serve: Garnish with extra thyme and serve warm with mashed potatoes or roasted veggies for a comforting meal.
