Spinach Bacon Egg Muffins

Ingredients

6 large eggs
1/4 cup milk (or heavy cream)
1 cup cooked spinach (squeezed dry)
1/2 cup cooked bacon, crumbled
1/2 cup shredded cheddar cheese
Salt and pepper, to taste
Non-stick cooking spray
Directions

Preheat the Oven:
Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin with non-stick cooking spray.

Mix the Egg Base:
In a mixing bowl, whisk together eggs, milk, salt, and pepper until smooth.

Assemble the Muffins:
Divide the cooked spinach, bacon, and cheddar cheese evenly into the muffin cups. Pour the egg mixture over the fillings, filling each cup about 3/4 full.

Bake:
Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top.

Cool and Serve:
Let the muffins cool for a few minutes before removing them from the tin. Serve warm, or store for a quick grab-and-go breakfast during the week!
