Zesty Orange-Glazed Cod

Ingredients

4 cod fillets
1/2 cup fresh orange juice (about 2 oranges)
Zest of 1 orange
2 tbsp honey or maple syrup
2 tbsp olive oil
2 tbsp butter
2 cloves garlic, minced
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Orange slices (for garnish, optional)
Directions

Preheat Oven: Set your oven to 400°F (200°C).
Season Cod: Pat the cod fillets dry with a paper towel, then season with salt and pepper on both sides.
Prepare Orange Glaze: In a small bowl, whisk together the orange juice, orange zest, honey, and a pinch of salt.
Sear Cod: In an oven-safe skillet, heat the olive oil over medium-high heat. Add the cod fillets and sear for 2-3 minutes on each side until golden brown.
Add Garlic and Butter: Add minced garlic and butter to the skillet, stirring until the garlic is fragrant and the butter is melted.
Pour Glaze: Pour the orange glaze over the cod in the skillet, then transfer the skillet to the preheated oven.
Bake: Bake for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
Serve: Garnish with fresh parsley and orange slices, and spoon the sauce from the skillet over the fillets for extra flavor.
