Hearty Mushroom Barley Soup Recipe
Ingredients:
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
16 oz mushrooms, sliced (button or cremini)
8 cups vegetable broth (or beef broth for a richer flavor)
1 cup pearled barley
1 tsp thyme (dried or fresh)
1 tsp parsley (plus more for garnish)
Salt and pepper to taste
Instructions:
Sauté Vegetables:
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook for 2–3 minutes.
Stir in carrots and celery, sauté for another 5 minutes.
Cook Mushrooms:
Add sliced mushrooms and cook until softened, about 5 minutes.
Add Broth & Barley:
Pour in the broth and stir in the barley.
Season with thyme, parsley, salt, and pepper.
Simmer:
Bring to a boil, then reduce heat to low.
Cover and simmer for 45–50 minutes, or until barley is tender.
Adjust Seasoning:
Taste and adjust seasoning if needed.
Serve:
Ladle into bowls, garnish with fresh parsley, and enjoy!
