Tender Tomato & Corn Chicken

Ingredients

4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
Salt and pepper to taste
1 can (14.5 oz) diced tomatoes, drained
1/2 cup corn (fresh, frozen, or canned)
1/4 cup onion, finely diced
2 cloves garlic, minced
1/2 tsp Italian seasoning
Fresh parsley, chopped (for garnish)
Directions

Season the chicken: Rub the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
Sear the chicken: Heat a large skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
Prepare the sauce: In the same skillet, sauté onions and garlic until fragrant. Add the diced tomatoes, corn, and Italian seasoning. Simmer for 5 minutes.
Combine and cook: Return the chicken to the skillet, spooning the tomato and corn mixture over it. Cover and simmer for 10-12 minutes, or until the chicken is cooked through (165°F internal temperature).
Garnish and serve: Sprinkle with fresh parsley and serve with a side of steamed corn on the cob or rice.
