Creamy Dijon Mustard Chicken

Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons unsalted butter
2 garlic cloves, minced
1/2 cup chicken broth
1/2 cup heavy cream
2 tablespoons Dijon mustard
1 teaspoon whole-grain mustard
1 teaspoon poppy seeds (optional)
Salt and pepper to taste
1 tablespoon fresh parsley, chopped
Instructions
Cook the Chicken:
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
Make the Sauce:
In the same skillet, melt butter and sauté minced garlic until fragrant. Deglaze the pan with chicken broth, scraping any brown bits. Reduce the heat to low and stir in heavy cream, Dijon mustard, and whole-grain mustard.
Simmer the Sauce:
Add poppy seeds (if using) and let the sauce simmer until slightly thickened. Adjust seasoning with salt and pepper.
Combine:
Return the chicken to the skillet, spooning the sauce over each piece. Simmer for 2-3 minutes to meld flavors.
Garnish and Serve:
Garnish with fresh parsley and serve hot with a side of rice, mashed potatoes, or roasted vegetables.
