Creamy Shrimp Pasta
Ingredients:
1 lb shrimp, peeled and deveined
1 lb penne pasta
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup cherry tomatoes, halved
1/2 cup corn kernels
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp dried thyme
Salt & pepper to taste
Fresh parsley, chopped
Instructions:
Cook the pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions, then drain and set aside.
Sauté the shrimp: In a large pan, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the pan and set aside.
Make the creamy sauce: In the same pan, add the minced garlic and cook for 1 minute until fragrant. Add the cherry tomatoes and corn, cooking for another 2 minutes. Pour in the heavy cream, Parmesan cheese, and thyme. Stir to combine, letting the sauce simmer for about 5 minutes until thickened.
Combine the pasta: Add the cooked pasta to the creamy sauce, stirring to coat the pasta evenly. Season with salt and pepper to taste.
Top with shrimp: Add the shrimp back into the pan, mixing everything together. Let it simmer for 2 more minutes.
Serve and garnish: Plate the creamy shrimp pasta, garnishing with fresh parsley. Serve and enjoy!
