Cajun Shrimp Alfredo Pasta
Ingredients
For the pasta:
300g penne or fettuccine pasta
1 lb large shrimp, peeled and deveined
1 tbsp Cajun seasoning
2 tbsp olive oil
For the Alfredo sauce:
2 tbsp unsalted butter
3 garlic cloves, minced
1 cup heavy cream
1/2 cup whole milk
1 cup Parmesan cheese, grated
1/2 tsp smoked paprika
Salt and black pepper to taste
For garnish:
1/2 cup shredded mozzarella cheese
Fresh parsley, chopped
Instructions
Cook the pasta:
Boil the pasta in salted water according to package instructions. Drain and set aside.
Season and cook the shrimp:
Toss the shrimp with Cajun seasoning. Heat olive oil in a large skillet over medium heat and sauté the shrimp for 2-3 minutes per side until pink and cooked through. Remove and set aside.
Prepare the Alfredo sauce:
In the same skillet, melt the butter and sauté the garlic until fragrant. Add heavy cream and milk, stirring until combined.
Gradually whisk in Parmesan cheese until the sauce thickens. Season with smoked paprika, salt, and pepper.
Combine the pasta and sauce:
Add the cooked pasta to the sauce, tossing to coat evenly. Mix in half of the cooked shrimp.
Bake for a cheesy finish (optional):
Transfer the pasta to an oven-safe dish. Top with the remaining shrimp and shredded mozzarella cheese. Broil in the oven for 3-5 minutes, or until the cheese is bubbly and golden.
Serve:
Garnish with fresh parsley and serve hot!
