Creamy Cajun Shrimp Pasta with Spinach and Crab Cakes
Ingredients
For the Cajun Shrimp Pasta:
8 oz fettuccine or linguine pasta
1/2 lb shrimp, peeled and deveined
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
1 tbsp Cajun seasoning
1 tbsp butter
1 tbsp olive oil
For the Crab Cakes (Optional):
1/2 lb lump crab meat
1/4 cup breadcrumbs
1 egg, beaten
1 tbsp mayonnaise
1 tsp Dijon mustard
1 tbsp parsley, chopped
Salt and pepper to taste
Oil for frying
Instructions
Cook the Pasta:
Boil pasta in salted water according to package instructions. Drain and set aside.
Prepare the Shrimp:
Toss shrimp with Cajun seasoning. Heat butter and olive oil in a skillet over medium heat. Sear shrimp for 2-3 minutes on each side until cooked through. Remove and set aside.
Make the Sauce:
In the same skillet, sauté garlic until fragrant. Add spinach and cook until wilted.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted. Season with a pinch of Cajun seasoning. Toss the pasta in the sauce until fully coated.
Make the Crab Cakes (Optional):
In a bowl, combine crab meat, breadcrumbs, egg, mayonnaise, mustard, parsley, salt, and pepper. Shape into small patties.
Heat oil in a skillet and fry crab cakes for 3-4 minutes per side until golden brown.
Assemble and Serve:
Plate the creamy Cajun pasta and top with shrimp. Add crab cakes on the side for an extra indulgent touch. Garnish with parsley.
