Caramel Crunch Cheesecake Bites
Ingredients:
1 pack of coconut cookies (crushed)
3 tbsp butter (melted)
16 oz cream cheese
1/2 cup sugar
1 egg
1 tsp coconut extract
1/4 cup caramel sauce
1/2 cup toasted coconut flakes
1/4 cup macadamia nuts
Preparation:
Crust: Mix crushed cookies with butter and press into a pan.
Cheesecake Layer: Combine cream cheese, sugar, egg, and coconut extract. Pour over crust.
Bake: Bake at 325°F (165°C) for 30 minutes. Cool completely.
Top: Spread caramel, sprinkle coconut flakes and macadamia nuts. Chill before serving.
Tip: Serve with coconut whipped cream for an extra tropical flair.
