Ravioli Primavera with Fresh Veggies
A quick and delightful recipe featuring seasonal vegetables and pillowy ravioli!
Ingredients:
250g ricotta-filled ravioli
200g asparagus tips
150g cherry tomatoes
2 tbsp olive oil
1 garlic clove, minced
Grated parmesan for topping
Salt and pepper
Instructions:
Cook ravioli until tender. Drain and reserve some pasta water.
Sauté garlic in olive oil, then add asparagus and tomatoes. Cook until soft.
Mix in ravioli and reserved pasta water for a light sauce.
Top with parmesan and serve hot.
